Veggie Garlic Noodles Recipe

Ingredients:

  • 300g noodles (spaghetti, lo mein, or rice noodles)
  • 3 tablespoons vegetable oil
  • 6–8 cloves garlic, finely minced
  • 1 medium onion, sliced
  • 1 cup bell peppers (red, yellow, green), thinly sliced
  • 1 cup shredded carrots
  • 1 cup broccoli florets, steamed
  • ½ cup snap peas
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional, or use more soy sauce for vegetarian/vegan)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon chili flakes (optional, for spice)
  • Salt and black pepper to taste
  • Chopped green onions and sesame seeds for garnish

Instructions:

  1. Prepare the noodles:
    Cook the noodles according to the package instructions. Drain and set aside.
  2. Sauté the aromatics:
    Heat vegetable oil in a large pan or wok over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant but not browned.
  3. Cook the vegetables:
    Add the onions, bell peppers, carrots, broccoli, and snap peas to the pan. Stir-fry for 3–4 minutes until the vegetables are tender-crisp.
  4. Combine the sauces:
    In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, and chili flakes (if using). Pour the sauce mixture into the pan with the vegetables.
  5. Add the noodles:
    Add the cooked noodles to the pan and toss everything together until the noodles are evenly coated with the sauce and combined with the vegetables. Adjust salt and pepper to taste.
  6. Garnish and serve:
    Remove from heat and garnish with chopped green onions and sesame seeds. Serve hot.

  • For a vegan version, ensure the sauces are plant-based.
