Ingredients:

  • For the Prime Rib:
    • 1 (4-6 pounds) prime rib roast (bone-in or boneless)
    • 2 teaspoons salt
    • 1 teaspoon black pepper
    • 1 teaspoon smoked paprika
    • 1 teaspoon garlic powder
  • For the Garlic Herb Butter:
    • 1/2 cup unsalted butter (softened)
    • 4 cloves garlic (minced)
    • 1 tablespoon fresh rosemary (finely chopped)
    • 1 tablespoon fresh thyme (finely chopped)
    • 1 teaspoon Dijon mustard
    • Zest of 1 lemon

Instructions:

  1. Prepare the Roast:
    • Remove the prime rib from the fridge at least 1 hour before cooking to bring it to room temperature.
    • Preheat your oven to 450°F (230°C).
    • Pat the roast dry with paper towels and season all over with salt, pepper, paprika, and garlic powder.
  2. Make the Garlic Herb Butter:
    • In a small bowl, mix the softened butter with minced garlic, rosemary, thyme, Dijon mustard, and lemon zest until well combined.
  3. Apply the Butter:
    • Rub the garlic herb butter generously over the entire surface of the prime rib, ensuring even coverage.
  4. Roast the Prime Rib:
    • Place the roast on a roasting rack in a large roasting pan. Insert a meat thermometer into the thickest part of the roast.
    • Roast at 450°F for 15 minutes to sear the exterior, then reduce the oven temperature to 325°F (165°C). Continue roasting until the internal temperature reaches your desired doneness:
      • Rare: 120-125°F (49-52°C)
      • Medium-rare: 130-135°F (54-57°C)
      • Medium: 140-145°F (60-63°C)
  5. Rest the Meat:
    • Remove the roast from the oven and tent it loosely with foil. Allow it to rest for 20-30 minutes before carving to retain its juices.
  6. Serve:
    • Slice the roast into thick, juicy pieces and serve with sides like mashed potatoes, roasted vegetables, or a fresh salad. Optionally, pair it with a red wine or beef jus for added flavor.
