Ingredients:

  • 1 pound (450g) ground beef or turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (4 oz) diced green chilies
  • 3 cups chicken or beef broth
  • 8 ounces (225g) spaghetti, broken in half
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, chopped cilantro, sliced jalapeños, sour cream

Instructions:

  1. Cook the Meat:
    • Heat olive oil in a large pot or Dutch oven over medium heat.
    • Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  2. Sauté Aromatics:
    • Add diced onion and garlic to the pot. Sauté for 2–3 minutes until the onion becomes translucent.
  3. Season:
    • Stir in the taco seasoning and cook for 1 minute to toast the spices and enhance the flavor.
  4. Add Liquids and Pasta:

    • Bring the mixture to a boil, then add the spaghetti, ensuring it is fully submerged in the liquid.
  5. Cook the Spaghetti:
    • Reduce the heat to medium-low, cover, and simmer for 12–15 minutes, stirring occasionally to prevent sticking. Cook until the spaghetti is tender and the liquid is mostly absorbed.
  6. Add Cheese:
    • Stir in the shredded cheddar and Monterey Jack cheese until melted and creamy.
  7. Season to Taste:
    • Adjust the salt and pepper as needed.
  8. Serve:
    • Serve the taco spaghetti hot, garnished with your favorite toppings like diced tomatoes, cilantro, jalapeños, or a dollop of sour cream.
