Ingredients:
- 1 pound (450g) ground beef or turkey
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 1 can (14 oz) diced tomatoes, undrained
- 1 can (4 oz) diced green chilies
- 3 cups chicken or beef broth
- 8 ounces (225g) spaghetti, broken in half
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Salt and pepper to taste
- Optional toppings: diced tomatoes, chopped cilantro, sliced jalapeños, sour cream
Instructions:
- Cook the Meat:
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
- Sauté Aromatics:
- Add diced onion and garlic to the pot. Sauté for 2–3 minutes until the onion becomes translucent.

- Season to Taste:
- Adjust the salt and pepper as needed.
