Beef and Rice with Cashews and Raisins Recipe

Ingredients:

  • 500g (1 lb) beef, cut into bite-sized pieces
  • 2 cups basmati or jasmine rice
  • 1 large onion, finely sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1 cup beef broth
  • 1/4 cup cashews, roasted
  • 1/4 cup raisins
  • 2 tbsp fresh parsley or cilantro, chopped
  • Salt and pepper to taste

Instructions:

  1. Prepare the Beef:
    • Heat olive oil in a large skillet or pot over medium-high heat.
    • Add the beef pieces, season with salt and pepper, and brown on all sides.
    • Remove the beef and set aside.
  2. Cook the Onions and Spices:
    • In the same pot, add the sliced onions and cook until golden and caramelized.
    • Stir in garlic, cumin, coriander, turmeric, and cinnamon. Cook for about 1 minute until fragrant.
  3. Combine the Beef and Simmer:
    • Return the beef to the pot and stir to coat it with the onion-spice mixture.
    • Add beef broth, cover, and simmer for 25–30 minutes until the beef is tender.
  4. Cook the Rice:
    • While the beef is cooking, rinse the rice and cook it according to the package instructions.
  5. Assemble and Serve:
    • Once the rice is cooked, fluff it with a fork and gently mix in the cooked beef and its sauce.
    • Top with roasted cashews, raisins, and chopped parsley or cilantro.

  • Total: 1 hour
