Beef and Rice with Cashews and Raisins Recipe
Ingredients:
- 500g (1 lb) beef, cut into bite-sized pieces
- 2 cups basmati or jasmine rice
- 1 large onion, finely sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1 cup beef broth
- 1/4 cup cashews, roasted
- 1/4 cup raisins
- 2 tbsp fresh parsley or cilantro, chopped
- Salt and pepper to taste
Instructions:
- Prepare the Beef:
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add the beef pieces, season with salt and pepper, and brown on all sides.
- Remove the beef and set aside.
- Cook the Onions and Spices:
- In the same pot, add the sliced onions and cook until golden and caramelized.
- Stir in garlic, cumin, coriander, turmeric, and cinnamon. Cook for about 1 minute until fragrant.
- Combine the Beef and Simmer:
- Return the beef to the pot and stir to coat it with the onion-spice mixture.
- Add beef broth, cover, and simmer for 25–30 minutes until the beef is tender.
- Cook the Rice:
- While the beef is cooking, rinse the rice and cook it according to the package instructions.
- Assemble and Serve:
- Once the rice is cooked, fluff it with a fork and gently mix in the cooked beef and its sauce.
- Top with roasted cashews, raisins, and chopped parsley or cilantro.
